- Preheat oven to 350 degrees F.
- Combine the sugars, oil, egg, and vanilla in a large bowl and mix till thoroughly combined.
- In a separate smaller bowl, combine the flour, oats, and baking powder.
- Mix the dry ingredients into the wet.
- Drop scoops / tablespoonfuls of dough (they expand, so don’t drop too large a dough) onto a parchment-lined baking sheet. Bake for about 12 mins, or until the edges brown slightly. Leave to cool in the pan for a minute or two, then move to a rack to cool completely.
